Who Knew Zucchini Could Be So Sexy?
Zucchini Carpaccio
SERVES 4-6
INGREDIENTS:
4 small zucchini (a combination of yellow and green is nice), sliced lengthwise as thinly as possible*
4 small scallions, thinly sliced
Several fresh mint** leaves, finely julienned
2 ounces of feta, thinly sliced or goat cheese, crumbled
½ lemon
Unrefined, cold-pressed extra-virgin olive oil for drizzling
Sea salt
Freshly ground black pepper
DIRECTIONS:
Layer the zucchini slices on a platter or place in a bowl. Top with scallions and mint.
Squeeze the lemon over the platter. Drizzle with olive oil and season to taste with sea salt and pepper.
*This is easy to do with a mandoline, but can be accomplished with a very sharp knife or a vegetable peeler.

When you’re invited to a fabulous summer dinner party, what is the first thing that pops into your head? For us, we’re thinking, “what the hell am I going to eat?” Then follows the next priority… will there be wine?
Well, we remember our lovely hostess had mentioned that tonight's fare would be light. She was going on about this mouth-watering recipe for an Italian salad named Zucchini Carpaccio. Instantly, we were anticipating the star of the night… a Raw Sexy Dish.
Arriving at our much awaited dinner destination, the usual suspects were already there on the romantically lit patio, with multiple bottles of wine already opened and poured.
Our surroundings and the food has us transported to what feels like our own private Italian getaway. Complete with a two-story deck adorned with white crystal lights, a fire pit and open seating that allows everyone to see each other through hazy red wine eyes.
This laid back dinner party is a stylish one and it makes us realize, “damn, everyone in this friend group is attractive!” Okay, maybe that’s the wine talking.
We realize what we have in common, besides a future wine hangover, is that everyone is adorned in some serious bling. Nothing too overstated, but, definitely worth mentioning are gold stacked rings, bangles with diamond embellishments and dainty necklaces.
As our romantic evening comes to an end, we can’t help but notice how our fare for the night served as both our nourishment and as our Style Coach. Taking note of this for next time… we sneak off to the kitchen to search for what’s left of that delicious Zucchini Carpaccio.
